Chicken "Mexican" Mix

I don't know what to call it but it's something new and was good. I will have it again.

You have to start by making the chicken



What you need for the chicken:
Mrs. Dash Chipotle
Cayenne Pepper
Chili Powder
Paprika
Water
Chicken (of course)



Cook in a pot until done.

Once chicken is done I put 3 ounces of chicken in a bowl with:



1/4 cup canned tomato



1/4 cup black beans
1 tbs diced jalapeno



1/4 cup quinoa



Final product.....yummy!

Strawberry Banana Shake w/Cottage Cheese



What You Need:
1 cup frozen banana and strawberries
1/2 cup cottage cheese
1 cup milk
1 packet of splenda
about 1 tbsp sliverd almonds

Mix all but the almonds in the blender.
Place all in glass and add almonds and enjoy!



It looks pretty hu? It was pretty good.

Basic Breakfast



2 Egg Whites
1 Whole Egg
Onion
Green Pepper
Pepper



Mix it all in a bowl




Enjoy!

My BBQ

Just did not want plain chicken so this is simple...its smelled super good but maybe I watered it down to much.



All I used was:
Chicken
Rich and Sassy BBQ from Famous Dave's
Water




Mix it in the pot...cook until done and enjoy!

Heat Me Up Tuna



What you need:
1 pack of Tuna
2 tbsp hot sauce
2 leaves of cabbage
onion diced
green pepper diced




I did not measure the onions or green peppers just til it looked like enough.




Mix the tuna, onion, green pepper and hot sauce in bowl.




Lay the mixture in the leaves and place in the fridge to get cold...you need spinach or cabbage to take some of the burn away. I use 2 tbsp of hotsauce but you may want to use less.

Enjoy!

Banana Almond Muffins





I try to keep things simple and I know this is a lot of ingredients (it is to me) but this is good. Try it!

Serves: 2

2 egg whites
1 mashed banana
3/4 teaspoon baking powder
3 packets splenda
1/2 teaspoon vanilla extract
1/5 cup oats
2 tablespoons almond meal
Cinnamon sprinkle (optional)




Mash a banana




add extract to the egg whites




Add everything to the bowl and mix together. Let it sit in bowl for about 5 min.
Preheat the oven to 350 degrees.




Put mixture in muffin pan. Spray with pam so it does not stick...I did not do that  :(  Silly me!
Bake at 350 for 10-12 min.




Sprinkle with Cinnamon (optional)

Grape and Apple Tuna Salad

This is another one I stole from Eat Oxygen and I was not going to try it because I thought it would be gross but it was pretty good...don't knock it until you try it. It's a quick lunch. I had grapes and apples that need to be eaten so this was a perfect choice.



What you will need:
Tuna
1/2 Apple cut up
1 celery stalk
about a cup of grapes cut in half
1 tbsp relish

Mix it all in a bowl and enjoy!



Apple Pie Oatmeal

This is sooooo simple. :)



What you will need:
Plain Oatmeal
Apple Flavor Drink Mix from Wal-Mart (the kind you would put in a bottle of water)

Mix the Apple mix in the oatmeal ****Do NOT use the whole package**** I only use a little bit...put a little in and if you want more then add a little at a time until you can get it right. It's an easy way to change up your morning oatmeal...hope you like it.

"Greek" Eggs



What you will need:
2 egg whites
1 whole egg
handful spinach
1/2 cup canned tomato
feta cheese



Let the spinach change to a dark green...then add the eggs.




When almost fully cooked add the eggs to the mix.




Sprinkle with feta cheese and enjoy!

Peanut Butter Banana Pancake

This was very good. Love it..easy to make and great for a quick breakfast and you can take on the go with you if your running late like I always am :)



What you need:
1 scoop syntha-6 Banana flavor
2 egg whites
1/2 cup uncooked oatmeal
2 tbsp PB2 (or any peanut butter)




Mix egg whites..oatmeal and syntha-6 in a bowl together.




See......  :)

Chicken and Egg Salad

This was a pretty easy one to make. Put Spinach Lettuce in a bowl...about 1 - 2 cups.



Cut up 3 ounces of chicken breast into chunks and 2 boild egg whites cut up and add in a different bowl. Add 1/4 canned tomatoes, mustard and dill pickle cut up. Mix together then top on lettuce and lunch is ready!



Looks good right? It was different for me and that is what I need right now :)

Spicy Mustard


I was playing around in the kitchen and came up with this spicy mustard. It's not what I was looking for but will be great as a dipping sauce for my chicken tonight. I did not measure anything. Just add to taste.

Yellow Mustard
Vinegar
Plain Yogurt
Dill
Celery Seed
Paparika
Cayenne Pepper
Water

Mix and enjoy!

BSN Cinnamon Pancakes





BSN Cinnamon Pancakes



1 scoop bsn cinnamon roll
3 egg whites
1/2 teaspoon cinnamon

Directions:

mix egg whites, cinnamon and BSN cinnamon roll in bowl together. Cook and make pancakes out of them.

This was good. I will make it again. Simple to make and will be easy to take with me in the morning and throw in a ziplock bag and eat on the way to work if I am running late.

Italian Egg Pizza

First let me start off by telling you how smart I am :)

I could not think of anything to have for breakfast and spicy eggs are starting to get old....this was sooooo good!





2 egg whites
1 whole egg
1/2 cup broccoli italiano
parmesan cheese (not much)

**I was going ot use feta cheese but did not have any...parmesan was all we had this morning...it was still good.

Cook the eggs like a pancake.
Warm up the broccoli in the microwave a little bit.
Once eggs are cooked add broccoli italiano on top and sprinkle on parmesan cheese. I put the whole thing in the microwave for about 10 seconds and it was really good.

Easy Spicy Chicken





Ok...I had chicken in the fridge that I had to cook and I wanted something spicy....(surprise right?)

2 boneless skinless chicken breast cut in chunks
Water
Hot Sauce
Mrs Dash Original
Cayenne Pepper
Paprika
Mrs Dash Chipotle

I put hot sauce and water into pan until it looked like enough. Warm liquid on stove and add spices. I did not measure them I just added as needed. Add chicken and cook until done.

I tried 1 little nugget and it was good. You can make this a spicy as you want or not. Just use caution with the spices :)

Broccoli Italiano



I got this from "Lean Bodies Cookbook" I am  not sure if this book is even available anymore but there are some great ideas in there.

Hubby told me that I needed to do something with the bags of broccoli in the freezer so I decided to make this because it's been awhile since I made this and it's pretty good.

4 cups of frozen broccoli
14.5 oz can of chopped tomatoes
1/8 tsp garlic powder
1 tsp italian herb seasoning
1/8 tsp ground black pepper

In microwave bowl combine all ingredients and cover. Microwave on high for 4 min. then stir and microwave for another 4 min.

Chicken Egg Salsa Mix



I used leftover chicken from my last meal. Just Cooked chicken on stovetop in a little bit of water and celery seed. Scrable 2 egg whites and 1 whole egg with some Mrs. Dash. Once chicken and eggs are cooked add together in bowl. Add about 2 tablespoons of salsa and enjoy!

Chicken Apple Salad

I got the idea and kinda stole it from http://www.eatoxygen.blogspot.com/ She has great ideas..stop over if you have not already been there.

3 oz chicken
1 apple
tablespoon of plain yogurt
celery seed about teaspoon

I cooked 6 ounces of chicken in water with celery seeds.
Cut up apple mix in bowl and add plain yogurt.

It was ok...I will have it again...it was not OMG good but it was alright. Try it and let me know what you think.

Lime Chicken



Marinade the chicken as follows for a few hours:

2 tbsp chili powder
1/2 cup lime juice
3 cloves garlic
2 tbsp oregano
1/2 tsp cumin

When you are ready to cook place on counter grill and enjoy.

Banana Ice Cream

Ok, I love this...super simple...all you will need it a blender or magic bullet, banana, ice and almonds.

The first thing I learned was that next time I need to remove the peel and freeze because once this baby was cold it was hard to get the peel off ;) Oops!

Place the banana in the freezer for a few hours. Its best to cut it in about 5 parts to make blending easy. Place in bag in freezer.

Once the banana is cold you can get ready to make your ice cream :)

I added about 3 small ice cubes to mix just because it was super sweet to me...but you be the judge on that.


I had some almonds left over from a snack from yesterday and I love banana and almonds together so this was perfect and looked good also...right?


It's SUPER easy! If you have viewed my older post I try to keep it simple ;)

Simply Breakfast


2 egg whites
1 whole egg
frozen onion and peppers
1 apple
make eggs like a pancake and throw onion and peppers in middle. Slice up one apple and serve.

Tight Curves Pancake


I love this because it is portable and very easy to make.
2 egg whites
1 whole egg
1 scoop of tight curves berry protein powder
1/2 cup uncooked oatmeal
and a few frozen berries
Mix everything in a bowl except the berries.....place mixture in a nonstick pan. I make 2 pancakes out of the mixture...as it is starting to cook..I add a few frozen berries and cook with mixture. Flip until done.
I think it taste like a blueberry muffin. Every time I make this people ask me about it...it smells and taste so good! I love this one!

OMG Eggs!



Ok, I went to the local market and bought real jalapenos (not already canned) and decided to throw it into 3 eggs (2 whites and 1 whole) and it was so super spicy that I had to throw salsa on top to take away some of the "sting" but it was still a great dish! If you love the "OMG, my mouth is on fire" thing...lol

Mix it all together and there it is!

It looks really good hu? So simple and easy in a rush....really there is nothing to it:

Frozen fish (I used Gortons)
Microwave fish and place it all on a plate...yum!

Brownie?

It does not look the best but....its chocolate protein powder, PB2 and water and placed in the microwave until I think its done ;) It was great in a pinch...easy to make a work and really hit the spot....a good change from the norm ;)

Spicy Deviled Eggs


6 eggs
2 tablespoons cottage cheese
Salt to taste
Hot sauce to taste
1 green onion thinly sliced

Place eggs in large saucepan, fill with hot water and bring to a boil. Remove from het and cover to cook for 10 min.

Transfer pan to sink and run eggs under cold water. When cooked, peel eggs and cut them in half lengthwise.

Remove yolks. Place three of the yols in small bowl with cottage cheese. mash with fork until smooth, then add salt and hot sauce to taste. Spoon yolk mixture into egg white halves and top with green onions.

Power Yogurt Strawberry


1/2 cup plain yogurt
1 scoop strawberry protein powder
1/2 cup sliced frozen strawberries
1 tablespoon flaxseed oil
1/2 teaspoon cinnamon
mix until protein is thoroughly blended and serve

Peanut Butter and Banana


1 pack vanilla protein powder
1 small bananas
2 tablespoons pb2
Ice .
Water as needed
mix in blender

Cucumber on Ice


Another one I got from "The Eat Clean Diet Cookbook" I love this one.
1 whole cucumber sliced
1/4 cup vinegar
1/2 teaspoon of sea salt
mix in bowl and serve cold

Clean Roasted Asparagus


I got this from "The Eat Clean Diet Cookbook"

1 pound fresh asparagus
2 tablespoons olive oil
1 tablespoon balsamic vinegar
1 clove garlic
Sea salt to taste
Black pepper to taste
Cooking spray

Peheat oven to 450. Break off woody stems. Rinse under water.
Toss spears in olive oil, vinegar, garlic and salt and pepper. Lay in single layer of baking sheet that has been sprayed with pam and bake 6-10 min. until done.


Hot Chicken Fingers

This is a picture of chicken and fries...here is how to make the chicken:

1 lb chicken breasts cut into tender strips
1/3 cup tabasco sauce
1/2 cup water
2 cups oatmeal uncooked
1/2 teaspoon cayenne pepper
1/2 teaspoon chili powder
2 egg whites beaten and slightly frothy
1/2 teaspoon chipotle seasoning

Mix tabasco, and water in a large bowl and marinate chicken in the fridge for an hour (or more; the longer it marinates, the more flavorful it gets)
Grind uncooked oatmeal in blender
Mix oatmeal with cayenne pepper and chili powder in a shallow bowl
Roll chicken in oatmeal mixture and lay on a foil-lined baking dish
Brush with egg white on face side up
Bake for about 25-30 minutes @ 350°
Turn over chicken and brush other side with egg white
Bake for another 15-30 minutes until golden brown

devil's chicken

This is real simple....I had chicken already made and just added a little bbq sauce from Famous Dave's "Devil's Spit" and added spinach on the side.

Salsa Chicken

Really easy and quick:Cut up chicken into little cubesCook on stove for a little while with water to keep from sticking and add some basil, oregano, pepper, and parsley (which ever you choose)Cut up some green peppers or onions and add them in Once the chicken is almost done and veg. are a little soft add the salsa and finish cooking just mixing the salsa in with the chickenNo need for oil or butter and tastes very good!!

CLEAN sweet Potato Fries

but it is soooo good that I have to share. Here is how to make them:

2 medium sweet potatoes, peeled and cut lengthwise (like steak fries)
1 Tbsp extra virgin olive oil
1 teaspoon salt
1/2 tsp white pepper (or black pepper)
1/4 tsp garlic powder
1/2 Tsp basil
1/4 Tsp oregano

________________

• Preheat oven to 425 degrees. Toss the sweet potatoes with the olive oil in a large bowl. ** I used a Gallon size Ziploc and eliminated the messy clean up **
• Mix the rest of the ingredients together, coating the sweet potatoes with the olive oil and spices (I added it to the ziploc after I'd shaken the oil over it).
• Lay out the fries in a baking pan in a single layer. Place in the oven uncovered.
• Bake the fries flipping them over every ten minutes for 40 minutes or until potatoes turn golden.
• Sprinkle with a little extra salt and serve. Note: the fries won't really get crispy, but they will be delicious!

apple cinnamon pancake


1/2 cup oats, uncooked
3 whole egg whites
2 drops vanilla extract
pinch cinnamon, as needed
pinch splenda, optional
1 small apple, diced


1. Mix all together and then place in pan
2. cook over med heat and its better than a real pancake!

I love this one...it's Beverly International protein powder...it's called cookies and cream...I used one scoop and added water until it looked like pudding...yumm!!!

I have not had this since before Christmas and I did not think that I would miss it like I did. It's really simple....oatmeal add a little bit of cinnamon (about 1 tsp) and an apple cut up in small pieces. This is soooo very good.

It makes me happy that I love something so much that is so easy and simple.

oatmeal and nana

This is really simple but its pretty good. I am not an oatmeal eater...I use to hate it..I would not even make it for my daughter because I thought it was gross. Anyways, back to how I made it...its just regular oatmeal and I put about 1 tbsp of pb2 and added a banana. Simple but easy. I am sorry to say that is the only way that I have used the pb2 to date. easy broccoli

I got this from the Lean Bodies Cookbook: My husband says that he hates the way this smells but he also hates broccoli....

1 use a bag of frozen broccoli (about 5 cups)
1/4 cup of chicken broth
1 tsp dried chervil
1 tsp vegetable flakes
1/2 tsp mrs dash original
1/8 tsp black pepper

place in microwave bowl and cover cook on high for 4 min...stir and microwave for another 4 min.

See that was really easy! I love the way it taste!

I got this from the new Weight Watchers Momentum Cookbook. I changed a few things around a little bit but you will get the idea.....this is how I made it.

6 large eggs
1 cup frozen corn..thawed
2 tbsp jalapeno peppers (from a jar alreade diced)
1/4 cup fat free milk
1/2 tsp thyme
1/4 tsp sea salt
1/4 tsp black pepper
a little jalapeno juice
12 cherry tomatoes, halved

whisk everything in a bowl minus the tomatoes.
spray skillet with pam and pour contents from bowl into skillet...add tomatoes to top and cover on med heat for about 15 minutes. cut in 4 parts and serve. WW points 4

yum!

I made this today and it was really pretty good.

2 tbsp of cottage cheese
4 strawberries
half a banana
1 tbsp wheat germ
splash of water
and as much ice as I could fit in the cup

blend together in the magic bullet.

It was yummy and pretty filling also. I will make this again!

roasted red pepper tuna salad from ww


This is a great lunch! I got the recipe from a Weight Watchers Cookbook.
2 6oz cans of tuna packed in water
1/4 cup fat-free mayonnaise
1/4 cup chopped roasted red bell pepper
2 scallions, chopped finely
1 tbsp fat-free sour cream
1 tbsp fresh dill chopped
I also take a red pepper (this is optional) and stuff it with the tuna...I put 3oz of tuna in the pepper and it is a great filling lunch!

egg salsa

Again, something simple and easy but very good. I hard boiled 3 eggs...removed the yolk and chopped up the whites. I added salsa that I purchase from the organic natural market and it's to die for!

boco burgers!!!


This is an easy and quick dinner..nothing hard about this one. Place the boco burger in a pan with a little pam sprayed in the pan first and on a plate place spinach leaves and tomatoes. I added onions in the pan for a few minutes and added to the plate for good measure. It smelled so good and when hubby came home he said "wow, that smells good....to bad I know you made it"...haha he won't eat anything that I make because it must be good for him ;)

I made my own salad dressing because I know that the ones in the store are not the best to use. I got the idea from "Lean Bodies Cookbook" bu Cliff Sheats. The book is not in stores anymore but it has some wonderful ideas in there.
2/3 cup apple cider vinegar
1/3 cup chicken broth
1 1/2 tsp dry mustard
1 tsp dried basil
1 tsp dried oregano
1 tsp paprika
1/4 tsp garlic powder
1/4 tsp cayenne pepper
Mix and place in fridge. I hope you like it!
I love it...it taste so good and even my daughter loves it!

Weight Watchers Soup


Here is a soup that I got from Weight Watchers. I have added a few things to it though and it's a good base soup and you can add anything else in there that you want.

here is how I make it:

2/3 cup carrots
1/2 cup onions
2 garlice cloves minced
1 1/2 cups diced cabbage
1/2 cup green beans
1 tbsp tomato paste
1/2 tsp dried basil
1/4 tsp dried oregano
1/4 sea salt
cayenne pepper to taste
3 cups of chicken broth

use a large saucepan to saute carrots, onion, and garlic for about 8 minutes.

add everythng else except the zucchini (that will be last) bring to a boil. reduce heat and simmer for 15 minutes.

Now you can add the zucchini and heat for about 5 minutes.

I decided to make a blog where I can post pictures and recipes for everyone. If there is a better/healthier way to make something please let me know. I am open to suggestions so please don't be afraid to speak up and if you try something please let me know if you love it or hate it.

I have another blog where I post everything I eat daily so please take a look over there also. I currently weight 170lbs and I am trying to get to 125lbs. I go to Weight Watcher meetings and I have lost 12lbs so far in this journey. I am not looking for a quick fix I know that this is a lifetime of changes and I need to learn how to change the bad behavior.
